I am really disappointed that your seemingly progressive publication would celebrate foie gras (“My favorite things,” March 22), especially since the subject previously has been addressed within these pages. Besha Rodell’s “favorite” foie gras BLT description left off some important background information.

Foie gras is made from the enlarged livers of male ducks and geese. These birds are kept in tiny wire cages and force-fed up to four pounds of grain and fat a day through metal pipes that are repeatedly shoved down their throats. This cruel procedure often causes severe injuries or death. When the birds are slaughtered, their livers are sold for foie gras. This horrendous practice should be outlawed, but until it is, we as consumers are the only ones who can stop it by refusing to support it.

Rodell said the small size of the sandwich kept it from being disgusting gluttony. I disagree.
