After seven years of chasing pop-ups across Durham, Hatch Burritos fans will soon have a permanent place to find their beloved breakfast burritos.
Owner Talitha Benjamin is opening a brick-and-mortar at 721 North Mangum Street next month. The menu will go beyond the breakfast burritos that built Hatchโs cultlike following; Benjamin plans to serve blue corn pancakes, golden milk french toast, green chile stew with pork shoulder, and lunch burrito options like chile relleno and chicken tinga.
Hatch’s journey follows a familiar trajectory seen at businesses like Isaacโs Bagels and Lutra: years of pop-ups cultivating a loyal base, support from established local businesses like Queeny’s and Locopops, and a crowdfunding push to get across the finish line.
