Happy INDY-in-print day. Our print newspaper is back after a brief summer hiatus, so grab a copy from a newsstand near you.
A few weeks ago I got to spend a Sunday morning at LaGana, Raleigh’s buzzy, fine-casual burger joint. Though it’s less than a year old, the restaurant has already built a cult following around its wagyu beef hamburgers, exclusive monthly omakase dinners, and decadent, seasonal cakes.
As a vegetarian, wagyu beef and omakase aren’t really my areas of expertise. My visit to LaGana was purely motivated by the cakes—and more specifically, by their baker, Carlos Lemus Sr.
Lemus has become a local micro-celebrity since LaGana opened. In-person, people ask him for selfies and beg him to bake their wedding cakes. Online, they’ve dubbed him Raleigh’s Cake Jefe. Lemus never expected this adoring fanbase—he just wanted to work with his son, Carlos Jr. (who manages the restaurant’s operations) and to develop the ultimate chocolate cake recipe. Which he did.
