Good morning, readers.

Durham has three new bars, and none of them took the obvious path.

The husband-and-wife team behind Fizzwerks decided to brew seltzer in a sea of craft breweries. At Primrose, owner Mike Douglass spent years perfecting daiquirisโ€”but has yet to put one on the menu. And at The Lenny, the Ibarra brothers, whose family built an empire of Mexican restaurants across the Triangle, have gone French.

Each departure reflects calculations about location and timing. Fizzwerks saw too many breweries already competing for attention. Primrose decided Instagram potential trumped a signature drinkโ€”hence the wall art with an uncanny digital gloss (Taylor Swift as the Mona Lisa, anyone?) The Lennyโ€™s dramatic rooftop setting pushed the Ibarras to reach beyond their usual playbook.

Whether these bets pay off long-term is yet to be seen.
